Our Most Famous Family {Monster Cookie} Recipe + A Gluten Free Christmas Cookie Roundup

Hey guys! It’s been a minute since I last shared much of anything on here. Guess what!! I’m finally…okay, not really, almost done with my college applications! yay, am I right?! I don’t expect you to be nearly as excited as me about this, but what you can be excited about is that means I can spend way more time sharing recipes & bits of life with y’all.

Thanksgiving has come and gone, and that means Christmas is just around the corner. In my family, Christmas cookies are the most important food of the season, but I’ve made the vow to stay gluten free all season long. Don’t get me wrong…I know gluten free doesn’t always mean healthy, but it will save me from a lot of holiday weight gain, bloat, and cruddy feeling-ness (if that makes sense?) Which is why I’ve decided to share with you my family’s famous monster cookie recipe. Nowadays my mom and I cook these up in muffin tins, but they can be made into regular cookies or bars too! No…they aren’t strict paleo or dairy free. Not grain free or soy free. But, hey, they’re gluten free and delicious, and I’m not forcing you to eat them! Plus if these aren’t “strict” enough for you, I’m rounding up the rest of the cookie recipes I’m making this year for all the shindigs we’ve got going on.

So here we go:

#1 Macarons by Yours Truly {muah}

I’m using my salted caramel macaron recipe, but I plan to use vanilla extract instead of caramel. Then for the filling I’m thinking a simple ganache or buttercream…maybe a jam? I have yet to decide, but no matter what the shell is the same which is why I freakin’ love macarons! {well one of the reasons}

#2 Paleo Hot Cocoa Cookies by Fit Foodie Finds

I have yet to make the frosting for these because I ran out of palm oil, but the cookies themselves are damn good! Every Christmas party needs a double chocolate cookie, and what’s better than one mimicking hot cocoa?! Cute & yummy!

#3 Real-Deal Chocolate Chip Cookies by Against All Grain

Because chocolate chip cookies are a must…not just for Christmas, but for every gathering. I think I’ve made this recipe for just about every party I’ve had in the past year and a half, and they never fail. I told some of my friends one time that they were my grandmother’s famous recipe and they totally bought it…I mean kind of…they know I’m too crazy to every use real flour.

#4 Grain Free Peanut Butter Blossoms from Brittany Angell

Another not strict paleo one, but you can’t take the peanut butter out of peanut butter blossoms. I mean you can…but who would want to do that?! Not this girl!!! This recipe is a classic over here at the Westerby household, and the peanut butter is here to stay for the holidays.

#5 Flourless Peppermint Chocolate Chip Cookies by Savory Lotus

I made these cookies for Christmas last year and absolutely loved them! This was a big surprise to me because I don’t usually like peppermint anything, but these cookies have just the right amount. Perfect to get you into the Christmas spirit!

#6 Peanut Butter Buckeyes from JIF

Gasp!!! Oh no I didn’t…oh yes I did. Just like chocolate chip cookies and peanut butter blossoms and monster cookies, and all the cookies, it wouldn’t be Christmas without peanut butter buckeyes. This recipe is easily made {mostly} paleo by subbing almond or sunflower butter for peanut butter, using grass-fed butter, using Enjoy Life Chocolate Chips {which you should buy in bulk from Amazon because HOLY SAVINGS!}, and subbing coconut oil for that nasty vegetable shortening. See…it isn’t even that hard! And since I’m taking all these steps to healthify my PB Buckeyes, you shouldn’t be so hard on me. Thank you…and last but not least…

#7 My Family’s Famous Monster Cookies by My Mom’s Aunt’s Mom’s Grandma’s Grandma {or something like that}

Monster Cookies {gluten free}

yields: ∼2 dozen cookies    prep time: 10 minutes    cook time: 12-15 minutes

Ingredients:

  • 5 tablespoons butter, softened
  • 2/3 cup granulated sugar (palm, cane, or maple will work)
  • 3/4 cup brown sugar
  • 1 cup peanut butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 2/3 cup gluten free oatmeal
  • 1/2 cup of M&Ms (I mix peanut butter, peanut, and regular; feel free to sub more chocolate chips for the M&Ms)
  • 1/4 cup chocolate chips

Directions:

  1. Preheat oven to 350°F and line two baking sheets with parchment (for cookies) or grease a pan (for cookie bars) or put cupcake tins in a muffin pan (for monster cookie cups)
  2. In a stand mixer on medium speed, beat together the butter, granulated sugar, brown sugar, and peanut butter until smooth. Add the eggs one at a time until evenly combined.
  3. Turn the speed down to low and add the vanilla, baking soda, and oatmeal.
  4. Once mixed, take the mixer bowl out and fold in the M&Ms and chocolate chips.
  5. Place 1 Tablespoon balls on parchment for cookies, lay the dough out on the pan for bars, or fill the muffin tins 3/4 full for cups.
  6. Cook for 12-15 minutes, or until no longer dough-ey, if making cookies or cups. If making bars, cook for 25-30 minutes. Let the monster cookies cool for at least 5 minutes before serving. And as always, enjoy! 🙂
